Saffron-Infused Rice Pudding
A delicate rice pudding made with fragrant saffron, sweetened with dates, and topped with nuts.

Ingredients
- 1 cup Basmati rice
- 2 cups Water
- 2 cups Milk
- 1/2 cup Sugar
- 1/4 cup Dates
- 1/8 tsp Saffron threads
- 1/2 cup Milk
- 2 tbsp Almonds
- 1 tbsp Ghee
Instructions
- Step 1: In a pot, combine 1 cup rinsed basmati rice, 2 cups water, and 2 cups milk. Bring to a simmer over medium heat, then reduce heat to low, cover, and cook for 20 minutes until rice is tender.
- Step 2: Meanwhile, soak 1/8 tsp saffron threads in 1/2 cup warm milk for 10 minutes.
- Step 3: Stir the saffron and its milk into the rice mixture, then add 1/2 cup sugar and 1/4 cup chopped dates. Cook uncovered for 10 minutes, stirring occasionally.
- Step 4: Heat 1 tbsp ghee in a small pan over medium heat. Add 2 tbsp sliced almonds and toast for 2 minutes until golden.
- Step 5: Sprinkle toasted almonds over the rice pudding, then let cool for 10 minutes before serving.
