Saffron-Infused Rice Pudding

  1. Step 1: In a pot, combine 1 cup rinsed basmati rice, 2 cups water, and 2 cups milk. Bring to a simmer over medium heat, then reduce heat to low, cover, and cook for 20 minutes until rice is tender.
  2. Step 2: Meanwhile, soak 1/8 tsp saffron threads in 1/2 cup warm milk for 10 minutes.
  3. Step 3: Stir the saffron and its milk into the rice mixture, then add 1/2 cup sugar and 1/4 cup chopped dates. Cook uncovered for 10 minutes, stirring occasionally.
  4. Step 4: Heat 1 tbsp ghee in a small pan over medium heat. Add 2 tbsp sliced almonds and toast for 2 minutes until golden.
  5. Step 5: Sprinkle toasted almonds over the rice pudding, then let cool for 10 minutes before serving.
