  1. Step 1: Place 1 cup brown lentils and 2 cups vegetable broth in a medium saucepan, then add 1/4 tsp saffron threads. Bring to a gentle simmer over medium heat, cover, and cook for 25 minutes until lentils are tender but hold shape.
  2. Step 2: Zest 1 lemon to yield 1 tsp zest, then cut the lemon in half and squeeze 2 tbsp juice. Stir zest and juice into the lentils while they simmer for the last 5 minutes.
  3. Step 3: Remove from heat, fluff with a fork, and stir in 2 tbsp olive oil and 1/4 cup chopped fresh parsley until well combined and fragrant.
