Sautéed Bell Peppers and Zucchini with Garlic

- 2 large bell peppers
- 2 medium zucchini
- 2 tablespoons olive oil
- 2 cloves garlic
- 1/2 medium onion
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1 teaspoon fresh thyme
Instructions
- Step 1: Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add 1/2 medium sliced onion and cook for 2 minutes until softened.
- Step 2: Add 2 large thinly sliced bell peppers and 2 medium thinly sliced zucchinis. Season with 1/4 teaspoon salt, 1/8 teaspoon black pepper, and 1 teaspoon chopped fresh thyme.
- Step 3: Cook for 8-10 minutes, stirring occasionally, until vegetables are tender with slight caramelization and edges are golden.
