Sautéed Chicken Thighs with Caramelized Onions

- 24 oz chicken thighs
- 2 tbsp olive oil
- 12 oz yellow onions
- 3 cloves garlic
- 1/2 cup heavy cream
- 1 tsp fresh thyme
- 1/4 tsp salt
- 1/8 tsp black pepper
Instructions
- Step 1: Pat 24 oz chicken thighs dry with paper towels and season evenly with 1/4 tsp salt and 1/8 tsp black pepper.
- Step 2: Heat 2 tbsp olive oil in a large skillet over medium-high heat. Add chicken thighs and cook for 5 minutes per side until golden brown, then remove and set aside.
- Step 3: Add 12 oz thinly sliced yellow onions to the same skillet and cook for 8 minutes until softened and caramelized, stirring occasionally.
- Step 4: Stir in 3 minced garlic cloves and cook for 1 minute until fragrant, then pour in 1/2 cup heavy cream and 1 tsp fresh thyme.
- Step 5: Return chicken thighs to the skillet, reduce heat to low, and simmer for 12 minutes until chicken reaches 165°F and sauce thickens slightly.
- Step 6: Discard any excess liquid and serve immediately.
