Sautéed Chicken Thighs with Lemon and Garlic

Ingredients
- 4 boneless, skinless (12 oz) chicken thighs
- 2 tablespoons olive oil
- 3 cloves, minced garlic
- 1, zested and juiced lemon
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chicken broth
Instructions
- Step 1: Pat 4 boneless, skinless chicken thighs (12 oz) dry with paper towels, then season with 1/2 teaspoon salt and 1/4 teaspoon black pepper.
- Step 2: Heat 1 tablespoon olive oil in a large skillet over medium-high heat until shimmering. Add the chicken thighs and cook for 5-6 minutes per side until golden brown and internal temperature reaches 165°F.
- Step 3: Transfer the chicken to a plate and set aside. Add the remaining 1 tablespoon olive oil to the skillet, then add 3 minced garlic cloves and cook for 30 seconds until fragrant.
- Step 4: Stir in 1 teaspoon lemon zest, 1 tablespoon lemon juice, 1 teaspoon dried thyme, and 1/4 cup chicken broth, then simmer for 1 minute.
- Step 5: Return the chicken to the skillet, coating with sauce, and cook for 2 minutes to reheat.
