Sautéed Egg and Spinach with Whole Wheat Toast

- 4 large eggs
- 2 cups fresh spinach
- 2 slices whole wheat bread
- 1 tbsp olive oil
- 1/4 tsp red pepper flakes
Instructions
- Step 1: Heat 1 tbsp olive oil in a non-stick skillet over medium heat. Crack 4 large eggs into the skillet and cook for 2-3 minutes until whites set but yolks remain runny, flipping once.
- Step 2: While eggs cook, toast 2 slices whole wheat bread until golden in a toaster. Place on plates.
- Step 3: Add 2 cups fresh spinach to the skillet with eggs and cook 1 minute until wilted. Season with 1/4 tsp red pepper flakes, salt, and pepper. Spoon eggs and spinach over toasted bread.
