- 1 medium avocado
- 2 slices smoked bacon
- 1 tbsp olive oil
- 1 clove garlic
- 2 large eggs
- 1/4 tsp salt
- 1/8 tsp black pepper
Instructions
- Step 1: Cut 1 medium avocado in half lengthwise, remove the pit, and gently scoop out a small amount of flesh to create a deeper cavity. Place each half cut-side up in a small oven-safe dish.
- Step 2: Heat 1 tbsp olive oil in a non-stick skillet over medium heat. Add 2 slices smoked bacon and cook for 3-4 minutes until crisp, then transfer to a paper towel-lined plate.
- Step 3: Add 1 minced garlic clove to the skillet with the bacon fat and sauté for 30 seconds until fragrant.
- Step 4: Crack 2 large eggs into the skillet, spacing them apart, and season with 1/4 tsp salt and 1/8 tsp black pepper.
- Step 5: Cover the skillet and cook for 4-5 minutes until egg whites are set but yolks remain runny.
- Step 6: Top the avocado halves with the eggs and crumbled bacon, then serve immediately.
