Sautéed Eggs with Bacon and Avocado

  1. Step 1: In a non-stick skillet over medium heat, cook 4 bacon slices until crispy, about 5-7 minutes. Remove bacon and set aside, leaving 1 tbsp of bacon fat in the skillet.
  2. Step 2: Add 1 tbsp olive oil to the skillet with the bacon fat, then crack 4 large eggs into the skillet. Season with 1/4 tsp salt and 1/8 tsp black pepper. Cook for 3-4 minutes until the whites are set and yolks are still runny.
  3. Step 3: Divide the eggs among 2 plates, top with 1 sliced avocado and 2 bacon slices per serving.
