Sautéed Garlic and Lemon Asparagus Pasta

  1. Step 1: Bring a large pot of salted water to a rolling boil. Add 8 oz spaghetti and cook for 8 minutes until al dente, then drain and reserve 1/4 cup pasta water.
  2. Step 2: Heat 2 tbsp olive oil in a large skillet over medium heat. Add 4 minced garlic cloves and sauté for 1 minute until fragrant, without browning.
  3. Step 3: Add 1 bunch of trimmed asparagus (cut into 1-inch pieces) to the skillet and cook for 4 minutes until bright green and tender-crisp, stirring occasionally.
  4. Step 4: Add the drained spaghetti to the skillet, then pour in the reserved 1/4 cup pasta water and 1/2 cup grated Parmesan cheese. Toss for 2 minutes until the cheese melts and the sauce coats the pasta, adding more pasta water if needed to reach desired consistency.
  5. Step 5: Stir in the zest and juice of 1 lemon, then season with salt and black pepper to taste.
