Instructions
- Step 1: Bring 2 cups water and 1 tablespoon white vinegar to a gentle simmer in a medium saucepan over medium heat, adding a pinch of salt to the water.
- Step 2: Heat 1 tablespoon olive oil in a large skillet over medium heat, then add 2 minced garlic cloves and sauté for 30 seconds until fragrant.
- Step 3: Add 2 cups packed fresh spinach to the skillet, stirring until wilted and reduced to about half its volume, approximately 2 minutes.
- Step 4: Carefully crack 2 large eggs into the simmering water, stirring gently to create a whirlpool, and cook for 3-4 minutes until whites are set but yolks remain runny.
- Step 5: Remove eggs with a slotted spoon, place atop the spinach in the skillet, and season with 1/4 teaspoon black pepper.
