Sautéed Kale and Shiitake Mushrooms with Lemon Zest

Ingredients
- 1 bunch kale
- 8 oz shiitake mushrooms
- 2 tbsp olive oil
- 2 garlic cloves
- 1 lemon
- 1/4 tsp sea salt
Instructions
- Step 1: Remove stems from 1 bunch kale and chop leaves into 1-inch strips. Slice 8 oz shiitake mushrooms (stems discarded) into thin slices.
- Step 2: Heat 2 tbsp olive oil in a large skillet over medium heat. Add 2 minced garlic cloves and cook for 1 minute until fragrant.
- Step 3: Add kale and mushrooms to the skillet, stirring to coat. Cook for 6-8 minutes until kale is wilted and mushrooms are tender, adding 1/4 tsp sea salt. Finish with 1 tbsp lemon zest from 1 lemon.
