Sautéed Mushroom Rings with Lemon and Thyme

- 12 oz cremini mushrooms
- 2 tbsp olive oil
- 2 cloves garlic
- 1 tbsp fresh thyme leaves
- 1 lemon
- 1/4 tsp salt
- 1/8 tsp black pepper
Instructions
- Step 1: Slice mushrooms into 1/4-inch rings and pat dry with paper towels. Heat 1 tbsp olive oil in a large skillet over medium-high heat until shimmering.
- Step 2: Add mushroom rings in a single layer, cooking undisturbed for 3 minutes until golden on the bottom, then stir and cook for 4 more minutes until tender.
- Step 3: Add minced garlic and thyme, stirring for 1 minute until fragrant, then squeeze in 1 tbsp lemon juice and add zest from half the lemon.
- Step 4: Season with salt and pepper, add remaining 1 tbsp olive oil, and cook for 2 minutes more until sauce reduces slightly and coats mushrooms.
