Sautéed Oysters with Lemon and Thyme
Quick-seared oysters with bright lemon and fresh thyme, finished with a touch of sea salt for a mineral-rich seafood centerpiece.

Ingredients
- 12 oysters
- 2 tbsp olive oil
- 1 lemon
- 1 tsp finely chopped fresh thyme
- 1/4 tsp sea salt
- pinch black pepper
Instructions
- Step 1: Pat oysters dry with paper towels. Slice 1 lemon into thin wedges. Finely chop 1 tsp fresh thyme.
- Step 2: Heat 2 tbsp olive oil in a large skillet over medium-high heat until shimmering. Add oysters in a single layer and cook for 1.5 minutes per side until edges curl and turn opaque.
- Step 3: Remove oysters from skillet. Add lemon wedges and chopped thyme to the skillet, stirring for 30 seconds to release flavors. Return oysters to the pan, toss to coat, and sprinkle with 1/4 tsp sea salt and a pinch of black pepper. Cook for 15 seconds more before serving.
