Sautéed Peppers with Garlic and Thyme

- 1 1/2 cups mixed bell peppers
- 3 cloves garlic
- 1 tbsp fresh thyme
- 2 tbsp olive oil
- 1 tsp lemon zest
- 1/4 tsp salt
- 1/8 tsp black pepper
Instructions
- Step 1: Thinly slice mixed bell peppers into 1/4-inch strips. Mince garlic cloves. Chop fresh thyme leaves from stems.
- Step 2: Heat olive oil in a large skillet over medium-high heat until shimmering. Add peppers and cook for 8 minutes, stirring occasionally, until they begin to soften and develop slight char marks.
- Step 3: Add minced garlic and thyme, stirring constantly for 1 minute until fragrant. Remove from heat, then stir in lemon zest, salt, and black pepper. Cook for 30 seconds more until flavors combine and oil is infused with herbs.
