Sautéed Salmon with Lemon-Garlic Asparagus

  1. Step 1: Pat 4 salmon fillets (6 oz each) dry with paper towels and season evenly with 1/2 tsp salt and 1/4 tsp black pepper on both sides.
  2. Step 2: Heat 1 tbsp olive oil in a large skillet over medium-high heat. Place salmon skin-side down and cook for 4-5 minutes until golden brown. Flip and cook for 3-4 minutes until cooked through. Transfer to a plate and tent with foil.
  3. Step 3: Add remaining 1 tbsp olive oil to the skillet. Add 2 minced garlic cloves and cook for 30 seconds until fragrant. Stir in juice and zest of 1 lemon, then add 2 tbsp chopped fresh dill.
  4. Step 4: Add 12 oz trimmed asparagus to the skillet, season with 1/4 tsp salt and 1/8 tsp black pepper, and cook for 8-10 minutes, stirring occasionally, until tender-crisp with slight char.
  5. Step 5: Serve salmon with lemon-garlic sauce spooned over top and roasted asparagus on the side.
