Sautéed Scrambled Eggs with Avocado and Chives

Ingredients
- 4 large eggs
- 1/2 ripe avocado
- 2 tbsp finely chopped fresh chives
- 1 tbsp butter
- pinch salt
- pinch black pepper
Instructions
- Step 1: Crack 4 large eggs into a bowl, whisk until fully combined. Season with a pinch of salt and a pinch of black pepper.
- Step 2: Heat 1 tbsp butter in a non-stick skillet over medium heat until melted and shimmering. Add the whisked eggs and cook for 3-4 minutes, stirring gently with a silicone spatula until softly set but still moist.
- Step 3: While eggs cook, dice 1/2 ripe avocado (pitted and peeled) into 1/4-inch cubes. Once eggs are cooked, remove from heat, stir in diced avocado and 2 tbsp chopped chives, and gently fold until evenly distributed and warmed through.
