Sautéed Shrimp with Smoked Paprika and White Beans

  1. Step 1: Pat 12 oz shrimp dry with paper towels and remove tails. Drain and rinse 1 can (15 oz) white beans, reserving 1/4 cup liquid. Mince 3 garlic cloves finely.
  2. Step 2: Heat 2 tbsp olive oil in a large skillet over medium-high heat. Add shrimp in a single layer and cook for 2 minutes per side until pink and opaque. Remove shrimp and set aside.
  3. Step 3: In the same skillet, add minced garlic and cook for 30 seconds until fragrant. Stir in 1.5 tsp smoked paprika and cook for 15 seconds to release flavor. Add reserved bean liquid and 1/4 cup water, then return shrimp to the pan.
  4. Step 4: Add drained white beans, 1 tbsp lemon juice, 1/2 tsp salt, and 1/4 tsp black pepper. Simmer for 3 minutes until heated through. Sprinkle with 2 tbsp chopped fresh parsley and serve immediately.
