Sautéed Shrimp with Tomato and Spinach

Ingredients
- 12 oz shrimp
- 2 tbsp olive oil
- 1/2 cup onion
- 3 cloves garlic
- 1 cup diced tomatoes
- 2 cups spinach
- 1/2 tsp sea salt
- 1/4 tsp black pepper
Instructions
- Step 1: Heat 2 tbsp olive oil in a large skillet over medium heat. Add 1/2 cup finely chopped onion and cook for 3 minutes until translucent, then add 3 minced garlic cloves and cook for 1 minute until fragrant.
- Step 2: Season 12 oz peeled and deveined shrimp with 1/2 tsp sea salt and 1/4 tsp black pepper, then add to the skillet. Cook for 2 minutes per side until pink and opaque.
- Step 3: Stir in 1 cup diced tomatoes and 2 cups fresh spinach, then cook for 2 minutes until spinach wilts and tomatoes are heated through.
