Sautéed Spinach Mushroom Pasta with Toasted Parmesan

Ingredients
- 8 oz fusilli pasta
- 2 tbsp olive oil
- 1/2 cup sliced mushrooms
- 1/2 cup fresh spinach
- 1/4 cup milk
- 1/4 cup grated parmesan cheese
- 1/4 tsp dried thyme
- 1/4 tsp salt
- 1/8 tsp black pepper
- 2 tbsp panko breadcrumbs
Instructions
- Step 1: Bring 4 quarts of water to a boil in a large pot, add 8 oz fusilli pasta, and cook for 8 minutes until al dente; drain and set aside.
- Step 2: Heat 2 tbsp olive oil in a large skillet over medium heat, add 1/2 cup sliced mushrooms, and cook for 3 minutes until softened.
- Step 3: Stir in 1/2 cup fresh spinach, 1/4 cup milk, 1/4 cup grated parmesan cheese, 1/4 tsp dried thyme, 1/4 tsp salt, and 1/8 tsp black pepper; cook for 2 minutes until spinach wilts and cheese melts.
- Step 4: Add the drained fusilli pasta to the skillet, toss to coat evenly, then transfer to a serving dish.
- Step 5: Sprinkle 2 tbsp panko breadcrumbs over the top, and broil for 2 minutes until golden and crispy.
