  1. Step 1: Bring 4 quarts of water to a boil in a large pot, add 8 oz fusilli pasta, and cook for 8 minutes until al dente; drain and set aside.
  2. Step 2: Heat 2 tbsp olive oil in a large skillet over medium heat, add 1/2 cup sliced mushrooms, and cook for 3 minutes until softened.
  3. Step 3: Stir in 1/2 cup fresh spinach, 1/4 cup milk, 1/4 cup grated parmesan cheese, 1/4 tsp dried thyme, 1/4 tsp salt, and 1/8 tsp black pepper; cook for 2 minutes until spinach wilts and cheese melts.
  4. Step 4: Add the drained fusilli pasta to the skillet, toss to coat evenly, then transfer to a serving dish.
  5. Step 5: Sprinkle 2 tbsp panko breadcrumbs over the top, and broil for 2 minutes until golden and crispy.
