Sautéed Sun-Dried Tomato and Spinach Pasta
A vibrant pasta dish with sun-dried tomatoes, fresh spinach, and a garlicky cream sauce that cooks in under 30 minutes.

Ingredients
- 12 oz spaghetti
- 3 tbsp olive oil
- 4 cloves, minced garlic
- 1/2 cup (packed in oil, drained and chopped) sun-dried tomatoes
- 2 cups fresh spinach
- 1/2 cup heavy cream
- 1/4 cup, grated parmesan cheese
- to taste salt
- to taste black pepper
Instructions
- Step 1: Bring a large pot of salted water to a rolling boil. Add 12 oz spaghetti and cook for 8-10 minutes until al dente, then drain and reserve 1/2 cup pasta water.
- Step 2: Heat 3 tbsp olive oil in a large skillet over medium heat. Add 4 minced garlic cloves and cook for 1 minute until fragrant, then stir in 1/2 cup chopped sun-dried tomatoes and cook for 2 minutes until warmed through.
- Step 3: Add 2 cups fresh spinach to the skillet and cook for 1 minute until wilted. Stir in 1/2 cup heavy cream and simmer for 2 minutes until sauce thickens slightly, then add 1/4 cup grated parmesan and stir until melted.
- Step 4: Add the drained spaghetti to the skillet along with 1/2 cup reserved pasta water. Toss vigorously for 1 minute until sauce coats every strand evenly. Season with salt and black pepper to taste.
