Sautéed Sun-Dried Tomato Pasta with Spinach and Parmesan

Ingredients
- 8 oz spaghetti
- 2 tbsp olive oil
- 3 cloves, minced garlic
- 1/4 cup, chopped sun-dried tomatoes
- 2 cups spinach
- 1/2 cup, grated Parmesan cheese

Instructions
- Step 1: Bring a large pot of salted water to a rolling boil. Add 8 oz spaghetti and cook for 8 minutes until al dente, then drain and reserve 1/2 cup pasta water.
- Step 2: Heat 2 tbsp olive oil in a large skillet over medium heat. Add 3 minced garlic cloves and 1/4 cup chopped sun-dried tomatoes, sautéing for 2 minutes until fragrant and tomatoes soften.
- Step 3: Stir in 2 cups fresh spinach and cook for 2 minutes until wilted and vibrant green.
- Step 4: Add the drained spaghetti to the skillet along with 1/2 cup reserved pasta water and 1/2 cup grated Parmesan cheese. Toss vigorously for 1 minute until the cheese melts and the sauce coats the pasta strands evenly.
