Sautéed Sun-Dried Tomato Pasta with Spinach and Pine Nuts

Ingredients
- 12 oz fettuccine
- 3 tbsp olive oil
- 1/2 cup (oil-packed, drained and chopped) sun-dried tomatoes
- 3 cloves, minced garlic
- 1/4 tsp red pepper flakes
- 1 cup vegetable broth
- 2 cups spinach
- 1/4 cup, toasted pine nuts
- 1/2 cup, grated Parmesan cheese
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: Bring a large pot of salted water to a boil. Add 12 oz fettuccine and cook for 8-10 minutes until al dente, then drain and reserve 1/2 cup pasta water.
- Step 2: Heat 3 tbsp olive oil in a large skillet over medium heat. Add 1/2 cup chopped sun-dried tomatoes, 3 minced garlic cloves, and 1/4 tsp red pepper flakes, sautéing for 2-3 minutes until tomatoes soften and garlic is fragrant.
- Step 3: Stir in 1 cup vegetable broth and simmer for 2 minutes, then add 2 cups fresh spinach and cook until wilted, about 1 minute.
- Step 4: Add drained fettuccine to the skillet with 1/4 cup reserved pasta water and 1/2 cup grated Parmesan cheese. Toss until cheese melts and sauce coats pasta, adding more pasta water if needed.
- Step 5: Stir in 1/4 cup toasted pine nuts and season with 1/2 tsp salt and 1/4 tsp black pepper, tossing to combine.
