- 2 medium sweet potatoes
- 1 red bell pepper
- 1 yellow bell pepper
- 1/2 onion
- 1 tbsp olive oil
- 1/4 tsp salt
- 1/8 tsp black pepper
- 1/2 tsp paprika
Instructions
- Step 1: Dice 2 medium sweet potatoes into 1/2-inch cubes, then rinse under cold water and pat dry. Thinly slice 1 red bell pepper and 1 yellow bell pepper, and dice 1/2 onion into small pieces.
- Step 2: Heat 1 tbsp olive oil in a large skillet over medium heat. Add sweet potatoes, bell peppers, and onion, then season with 1/4 tsp salt, 1/8 tsp black pepper, and 1/2 tsp paprika.
