Sautéed Sweet Potato and Black Bean Breakfast Hash

- 2 medium sweet potatoes
- 1 can (15 ounces), rinsed and drained black beans
- 1/2 cup, chopped onion
- 1/2 cup, chopped bell pepper
- 2 tablespoons olive oil
- 1/2 teaspoon cumin
- 1/4 teaspoon chili powder
- 1/4 teaspoon salt
- 2 tablespoons, chopped fresh cilantro
- 1, sliced avocado
Instructions
- Step 1: Peel and dice 2 medium sweet potatoes into 1/2-inch cubes. Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add sweet potatoes and cook, stirring occasionally, for 10-12 minutes until tender and slightly browned.
- Step 2: Add 1/2 cup chopped onion and 1/2 cup chopped bell pepper to the skillet and cook for 5 minutes until softened. Stir in 1 can (15 ounces) rinsed and drained black beans, 1/2 teaspoon cumin, 1/4 teaspoon chili powder, and 1/4 teaspoon salt. Cook for 3 minutes to heat through and blend flavors.
