Sautéed Yellow Tomato Basil Pasta with Lemon Zest

Ingredients
- 12 oz spaghetti
- 4 tbsp olive oil
- 3 cloves, minced garlic
- 2 cups, halved yellow cherry tomatoes
- 1/4 cup, chopped fresh basil
- 1, zest only lemon
- 1/2 cup, grated Parmesan cheese
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 cup, reserved pasta water
Instructions
- Step 1: Bring a large pot of salted water to a rolling boil. Add 12 oz spaghetti and cook for 8-10 minutes until al dente, then drain and reserve 1/4 cup pasta water.
- Step 2: Heat 4 tbsp olive oil in a large skillet over medium heat. Add 3 minced garlic cloves and cook for 1 minute until fragrant, stirring constantly to prevent browning.
- Step 3: Add 2 cups halved yellow cherry tomatoes to the skillet and cook for 3-4 minutes until they begin to soften and release juices, stirring occasionally.
- Step 4: Add the drained spaghetti to the skillet along with 1/4 cup reserved pasta water, 1/4 cup chopped fresh basil, and the zest of 1 lemon. Toss vigorously for 1 minute until the sauce coats every strand.
- Step 5: Stir in 1/2 cup grated Parmesan cheese until melted, then season with 1/4 tsp salt and 1/4 tsp black pepper. Serve immediately.
