Sautéed Zucchini and Bell Pepper with Fresh Herbs

- 2 medium, sliced into 1/4-inch rounds zucchini
- 1, thinly sliced red bell pepper
- 1/4 cup olive oil
- 2 tbsp, finely chopped fresh parsley
- 1 tbsp fresh thyme leaves
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: Heat 1/4 cup olive oil in a large skillet over medium heat until shimmering.
- Step 2: Add 2 medium zucchini slices and 1 red bell pepper, and sauté for 8-10 minutes until tender and slightly golden at the edges, stirring occasionally.
- Step 3: Stir in 2 tbsp chopped fresh parsley, 1 tbsp fresh thyme, 1/2 tsp garlic powder, 1/2 tsp salt, and 1/4 tsp black pepper, and cook for 1 more minute until fragrant.
