Sautéed Zucchini and Corn with Fresh Herbs

  1. Step 1: Heat 2 tbsp olive oil in a large skillet over medium-high heat. Add 2 cups sliced zucchini and cook for 5 minutes, stirring occasionally, until they soften and develop light golden edges.
  2. Step 2: Add 1 cup fresh corn kernels and 1/4 tsp garlic powder to the skillet, stirring to combine. Cook for 3-4 minutes until corn is tender and zucchini is crisp-tender.
  3. Step 3: Remove skillet from heat and stir in 2 tbsp chopped parsley and 1 tbsp chopped dill. Season with salt and freshly ground black pepper to taste, then serve immediately.
