- 2 medium zucchinis
- 2 large eggs
- 1/4 cup, grated Parmesan cheese
- 1/4 cup almond flour
- 1 tablespoon olive oil
- 1/4 cup Greek yogurt

- 1 teaspoon lemon juice
Instructions
- Step 1: Grate 2 medium zucchinis and place in a clean kitchen towel. Squeeze firmly for 10 minutes to remove excess liquid.
- Step 2: In a bowl, combine squeezed zucchini, 2 large eggs, 1/4 cup grated Parmesan, 1/4 cup almond flour, 1/4 teaspoon salt, and 1/8 teaspoon black pepper.
- Step 3: Heat 1 tablespoon olive oil in a non-stick skillet over medium heat.
