Sautéed Zucchini Ribbons with Garlic and Lemon

  1. Step 1: Trim the ends off the zucchinis and use a vegetable peeler to create thin ribbons, collecting them in a bowl.
  2. Step 2: Heat 1 tablespoon extra virgin olive oil in a large skillet over medium heat. Add 2 minced garlic cloves and sauté for 30 seconds until fragrant, being careful not to brown.
  3. Step 3: Add the zucchini ribbons to the skillet, season with 1/4 teaspoon sea salt and 1/4 teaspoon black pepper, and toss to coat. Cook for 4-5 minutes, stirring occasionally, until tender-crisp and bright green.
  4. Step 4: Squeeze in 1 tablespoon lemon juice and toss again to combine, then remove from heat immediately.
