Sautéed Zucchini Ribbons with Garlic and Lemon
A simple, vibrant side dish made with thinly sliced zucchini, sautéed with garlic and lemon for a fresh, light flavor.

Ingredients
- 300g zucchini
- 1 tbsp extra virgin olive oil
- 2 cloves, minced garlic
- 1/2, juiced lemon
- 1/4 tsp sea salt
- 1/4 tsp black pepper
Instructions
- Step 1: Trim the ends off the zucchinis and use a vegetable peeler to create thin ribbons, collecting them in a bowl.
- Step 2: Heat 1 tablespoon extra virgin olive oil in a large skillet over medium heat. Add 2 minced garlic cloves and sauté for 30 seconds until fragrant, being careful not to brown.
- Step 3: Add the zucchini ribbons to the skillet, season with 1/4 teaspoon sea salt and 1/4 teaspoon black pepper, and toss to coat. Cook for 4-5 minutes, stirring occasionally, until tender-crisp and bright green.
- Step 4: Squeeze in 1 tablespoon lemon juice and toss again to combine, then remove from heat immediately.
