Sautéed Zucchini Rings with Lemon Thyme Dressing

- 1 tbsp Lemon juice
- 1 tsp Fresh thyme leaves

- 1/8 tsp Black pepper
Instructions
- Step 1: Trim zucchini ends and slice into 1/4-inch thick rounds using a mandoline; arrange in a single layer on a plate.
- Step 2: Heat 1 tbsp olive oil in a large skillet over medium heat until shimmering. Add zucchini rings in a single layer without crowding and cook for 3-4 minutes per side until golden brown and tender, flipping carefully with a spatula.
- Step 3: Transfer zucchini to a serving plate. Whisk lemon juice, 1 tsp thyme, 1/4 tsp salt, and 1/8 tsp black pepper in a small bowl. Drizzle dressing over zucchini and toss gently to coat.
