Savory Cheesy Cauliflower Hash with Fried Eggs

Ingredients
- 1 large head (2 cups riced) cauliflower
- 2 tbsp olive oil
- 1/2 cup shredded cheddar cheese
- 4 large eggs
- 2 tbsp, sliced green onion
- 1/4 tsp salt
- 1/8 tsp black pepper
Instructions
- Step 1: Pulse 1 large head cauliflower (2 cups riced) in a food processor until it resembles fine crumbs, then transfer to a bowl.
- Step 2: Heat 1 tbsp olive oil in a skillet over medium heat. Add riced cauliflower, 1/4 tsp salt, and 1/8 tsp black pepper. Cook for 10-12 minutes, stirring occasionally, until golden and crispy.
- Step 3: Press cauliflower mixture into an even layer in the skillet. Sprinkle 1/2 cup shredded cheddar cheese evenly over the top. Cook for 2 more minutes until cheese melts.
- Step 4: Push cauliflower to one side of the skillet, add remaining 1 tbsp olive oil, and fry 4 large eggs for 3 minutes until yolks are runny. Top cauliflower with fried eggs and sprinkle with 2 tbsp sliced green onions.
