Savory Farro and Roasted Vegetable Bowl

  1. Step 1: Preheat oven to 400°F. Toss sweet potato, red onion, and broccoli with 1 tbsp olive oil, dried rosemary, dried thyme, salt, and pepper on a baking sheet.
  2. Step 2: Roast 25-30 minutes until vegetables are tender and caramelized, flipping halfway.
  3. Step 3: Bring 2 cups water to boil in a saucepan. Add rinsed farro, reduce heat to low, cover, and simmer 25 minutes until water absorbed.
  4. Step 4: Fluff cooked farro with a fork. In a large bowl, combine farro, roasted vegetables, lemon juice, and optional feta. Toss gently to combine.
  5. Step 5: Season with additional salt and pepper if needed. Garnish with fresh parsley before serving.
