Savory Farro and Roasted Vegetable Bowl

Ingredients
- 1 cup, rinsed farro
- 2 cups water
- 1 tbsp olive oil
- 1 large, peeled and cubed into 1/2-inch pieces sweet potato
- 1 large, cut into wedges red onion
- 1 cup, florets broccoli
- 1/2 tsp dried rosemary
- 1/2 tsp dried thyme
- 1 tbsp lemon juice
- 1/4 cup, crumbled (optional) feta cheese
- 1/4 cup, chopped fresh parsley
Instructions
- Step 1: Preheat oven to 400°F. Toss sweet potato, red onion, and broccoli with 1 tbsp olive oil, dried rosemary, dried thyme, salt, and pepper on a baking sheet.
- Step 2: Roast 25-30 minutes until vegetables are tender and caramelized, flipping halfway.
- Step 3: Bring 2 cups water to boil in a saucepan. Add rinsed farro, reduce heat to low, cover, and simmer 25 minutes until water absorbed.
- Step 4: Fluff cooked farro with a fork. In a large bowl, combine farro, roasted vegetables, lemon juice, and optional feta. Toss gently to combine.
- Step 5: Season with additional salt and pepper if needed. Garnish with fresh parsley before serving.
