Savory Garlic-Herb Chicken Thighs with Asparagus

Ingredients
- 4 bone-in, skin-on chicken thighs
- 3 tbsp olive oil
- 4 minced garlic cloves
- 1 tbsp fresh thyme leaves
- 12 oz asparagus spears
- 1 tbsp lemon juice
- 1/2 tsp sea salt
- 1/4 tsp black pepper
Instructions
- Step 1: Preheat oven to 400°F (200°C). Pat chicken thighs dry with paper towels, then season evenly with 1/2 tsp salt and 1/4 tsp black pepper.
- Step 2: Heat 2 tbsp olive oil in an oven-safe skillet over medium-high heat. Add chicken thighs skin-side down, pressing gently to ensure even contact; cook for 5 minutes until skin is golden brown and crisp.
- Step 3: Flip chicken, add minced garlic and thyme to the skillet, and cook for 1 minute until fragrant. Arrange asparagus around chicken, drizzle with remaining 1 tbsp olive oil, and season with a pinch of salt.
- Step 4: Transfer skillet to oven and roast for 18-20 minutes until chicken reaches 165°F (74°C) internally and asparagus is tender.
- Step 5: Squeeze lemon juice over chicken and asparagus, then let rest for 5 minutes before serving.
