Ingredients
- 1 (15 oz) can, rinsed and drained chickpeas
- 1 red, 1 green, thinly sliced bell peppers
- 1 cup, julienned carrots
- 1 tbsp, grated ginger
- 2 cloves, minced garlic
- 3 tbsp coconut aminos
- 1/2 tsp turmeric powder
- 1 tbsp sesame oil
- 3, sliced green onions
Instructions
- Step 1: Heat 1 tbsp sesame oil in a large skillet over medium-high heat. Add ginger and garlic, sautéing for 1 minute until fragrant.
- Step 2: Add bell peppers and carrots, stir-frying for 4 minutes until crisp-tender.
- Step 3: Stir in chickpeas, coconut aminos, and turmeric powder. Cook for 3 minutes, stirring frequently, until chickpeas are lightly caramelized.
- Step 4: Remove from heat and toss with green onions before serving.
