  2. Step 2: While oats cook, heat 1 tbsp olive oil in a small skillet over medium heat. Add 1/2 cup sliced mushrooms and sauté for 3-4 minutes until softened and golden. Add 2 thinly sliced scallions and cook for 1 minute until fragrant.
