Savory Mushroom and Scallion Oatmeal

Ingredients
- 1/2 cup rolled oats
- 1 cup vegetable broth
- 1/2 cup mushrooms
- 2 scallions
- 1 tbsp olive oil
- 1/4 tsp salt
- 1/8 tsp black pepper
Instructions
- Step 1: In a small saucepan, combine 1/2 cup rolled oats, 1 cup vegetable broth, 1/4 tsp salt, and 1/8 tsp black pepper. Bring to a simmer over medium heat, then reduce to low and cook for 5-7 minutes, stirring occasionally, until oats are tender and liquid is absorbed.
- Step 2: While oats cook, heat 1 tbsp olive oil in a small skillet over medium heat. Add 1/2 cup sliced mushrooms and sauté for 3-4 minutes until softened and golden. Add 2 thinly sliced scallions and cook for 1 minute until fragrant.
- Step 3: Stir the mushroom mixture into the cooked oats. Serve immediately for a warm, savory breakfast.
