Savory Vegetable Stir-fry with Ginger and Soy

Ingredients
- 1 cup broccoli florets
- 1 cup bell peppers, thinly sliced
- 1/2 cup snap peas
- 1 tbsp sesame oil
- 3 tbsp soy sauce
- 1 tbsp fresh ginger, minced
- 2 cloves garlic, minced
- 1 tsp rice vinegar
- 1 tsp cornstarch
- 2 cups cooked rice
Instructions
- Step 1: Heat 1 tbsp sesame oil in a large skillet over medium-high heat until shimmering. Add 1 cup broccoli florets, 1 cup sliced bell peppers, and 1/2 cup snap peas, stirring to coat. Cook for 4 minutes until vegetables are crisp-tender and slightly charred at edges.
- Step 2: Add 1 tbsp minced ginger and 2 minced garlic cloves, stirring for 30 seconds until fragrant. Pour in 3 tbsp soy sauce, 1 tsp rice vinegar, and 1 tsp cornstarch mixed with 2 tbsp water; stir until sauce thickens and coats vegetables, about 1 minute.
- Step 3: Fold in 2 cups cooked rice and cook for 2 more minutes until heated through and sauce is evenly distributed. Serve immediately while vegetables remain bright and crisp.
