Savory Zucchini and Onion Frittata

- 4 large eggs
- 1/2 cup diced zucchini
- 1/4 cup diced yellow onion
- 1 tbsp avocado oil
- 1/4 tsp salt
- 1/8 tsp black pepper
- 1/4 tsp dried thyme
Instructions
- Step 1: Preheat oven to 375°F (190°C). In a medium bowl, whisk together 4 large eggs, 1/4 tsp salt, and 1/8 tsp black pepper until well combined.
- Step 2: Heat 1 tbsp avocado oil in a 10-inch oven-safe skillet over medium heat. Add 1/2 cup diced zucchini and 1/4 cup diced yellow onion, and cook for 5-6 minutes until the zucchini is tender and onions are golden, stirring occasionally.
- Step 3: Pour the egg mixture over the vegetables in the skillet, and sprinkle with 1/4 tsp dried thyme. Cook on the stovetop for 3-4 minutes until the edges begin to set, then transfer the skillet to the oven and bake for 12-15 minutes until the frittata is set and golden on top.
