Sear and Bake Lemon-Garlic Chicken Thighs

Ingredients
- 6, about 2 lbs chicken thighs, bone-in skin-on
- 2 tbsp olive oil
- 4, minced garlic cloves
- 1, thinly sliced lemon
- 1 tbsp, finely chopped fresh rosemary
- 1 tbsp fresh thyme leaves
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp unsalted butter
Instructions
- Step 1: Preheat oven to 400°F (200°C). Pat chicken thighs dry with paper towels, then season evenly with 1/2 tsp salt and 1/4 tsp black pepper.
- Step 2: Heat 2 tbsp olive oil in a large oven-safe skillet over medium-high heat until shimmering. Place chicken thighs skin-side down and cook for 5-6 minutes until skin is golden and crispy, then flip and cook for 2 more minutes.
- Step 3: Add 4 minced garlic cloves, 1 sliced lemon, 1 tbsp chopped rosemary, and 1 tbsp thyme to the skillet, stirring to coat chicken. Transfer skillet to oven and bake for 20-25 minutes until chicken reaches 165°F (74°C) internally.
- Step 4: Remove from oven, add 2 tbsp butter, and stir until melted. Let rest for 5 minutes before serving.
