Sear-Grilled Lemon-Dill Chicken

Ingredients
- 4, boneless skinless (6 oz each) chicken breasts
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup lemon juice
- 2 tbsp, chopped fresh dill
- 1 tbsp butter
Instructions
- Step 1: Pat 4 chicken breasts dry with paper towels. Rub with 1 tablespoon olive oil, 1/2 teaspoon salt, and 1/4 teaspoon black pepper, coating evenly on both sides.
- Step 2: Heat a skillet over medium-high heat until hot. Add chicken and sear for 5 minutes without moving until golden brown. Flip and cook for 4-5 minutes more until internal temperature reaches 165°F and juices run clear.
- Step 3: Remove chicken from skillet and let rest for 5 minutes. Add 1/4 cup lemon juice and 2 tablespoons chopped dill to the skillet, scraping up browned bits. Simmer for 1 minute until slightly reduced.
- Step 4: Return chicken to skillet, spooning lemon-dill sauce over top. Add 1 tablespoon butter, swirling to melt. Cook for 1 minute more until sauce coats the chicken.
