  1. Step 1: Pat 4 salmon fillets (6 oz each) dry with paper towels. Season both sides with salt and pepper.
  2. Step 2: Heat 1 tbsp olive oil in a large skillet over medium-high heat until shimmering. Place salmon skin-side down in skillet and cook for 4 minutes until skin is crispy and golden.
  3. Step 3: Flip salmon and cook for 3 minutes until internal temperature reaches 125°F (52°C) for medium-rare.
  4. Step 4: While salmon cooks, mince 2 garlic cloves and chop 1 tbsp fresh dill. Whisk with 1 tbsp olive oil and 1 tbsp lemon juice from 1 lemon.
  5. Step 5: Transfer salmon to plates, drizzle with lemon-dill sauce, and serve immediately.
