Sesame-Ginger Glazed Salmon with Stir-Fried Vegetables

Ingredients
- 4 (6 oz each) salmon fillets
- 3 tbsp soy sauce
- 2 tbsp rice vinegar
- 2 tbsp honey
- 1 tbsp sesame oil
- 1 tbsp, grated fresh ginger
- 1 clove, minced garlic
- 2 cups (broccoli florets, bell peppers, snap peas), cut uniformly mixed vegetables
- 2 tbsp vegetable oil
- 1 tbsp sesame seeds
Instructions
- Step 1: Whisk together 3 tbsp soy sauce, 2 tbsp rice vinegar, 2 tbsp honey, 1 tbsp sesame oil, 1 tbsp grated ginger, and 1 minced garlic clove in a bowl.
- Step 2: Pat salmon dry, then brush both sides with half the glaze; set aside.
- Step 3: Heat 1 tbsp vegetable oil in a large skillet over medium-high heat. Add mixed vegetables and stir-fry for 4-5 minutes until crisp-tender; remove and set aside.
- Step 4: Add remaining 1 tbsp vegetable oil to skillet, then place salmon skin-side down (if skin is on) and cook for 4-5 minutes without moving.
- Step 5: Flip salmon, cook for 3-4 minutes more, then brush with remaining glaze.
- Step 6: Return vegetables to skillet, toss to coat in glaze, and cook for 1 minute.
- Step 7: Transfer salmon to plates, top with vegetables, and sprinkle with 1 tbsp sesame seeds.
