  1. Step 1: Cook rice noodles according to package directions (usually 5-7 minutes in boiling water), then drain and rinse under cold water to stop cooking. Set aside.
  2. Step 2: Heat 1 tbsp oil in a wok or large skillet over high heat until shimmering. Add tofu cubes and stir-fry for 5 minutes until golden brown on all sides.
  3. Step 3: Push tofu to one side of the wok. Add minced garlic and grated ginger, stir-frying for 30 seconds until aromatic.
  4. Step 4: Add snap peas and stir-fry for 2 minutes until bright green and crisp-tender.
  5. Step 5: In a small bowl, whisk soy sauce, rice vinegar, honey, and sesame oil. Pour over tofu and vegetables, then add drained noodles. Toss for 2 minutes until evenly coated and sauce thickens slightly.
  6. Step 6: Sprinkle with toasted sesame seeds before serving.
