Sesame-Ginger Stir-Fried Tofu with Snap Peas and Rice Noodles

Ingredients
- 14 oz, pressed and cubed firm tofu
- 8 oz rice noodles
- 1.5 cups, trimmed snap peas
- 2 cloves, minced garlic
- 1 tbsp, grated fresh ginger
- 3 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tbsp honey
- 1 tbsp toasted sesame seeds
Instructions
- Step 1: Cook rice noodles according to package directions (usually 5-7 minutes in boiling water), then drain and rinse under cold water to stop cooking. Set aside.
- Step 2: Heat 1 tbsp oil in a wok or large skillet over high heat until shimmering. Add tofu cubes and stir-fry for 5 minutes until golden brown on all sides.
- Step 3: Push tofu to one side of the wok. Add minced garlic and grated ginger, stir-frying for 30 seconds until aromatic.
- Step 4: Add snap peas and stir-fry for 2 minutes until bright green and crisp-tender.
- Step 5: In a small bowl, whisk soy sauce, rice vinegar, honey, and sesame oil. Pour over tofu and vegetables, then add drained noodles. Toss for 2 minutes until evenly coated and sauce thickens slightly.
- Step 6: Sprinkle with toasted sesame seeds before serving.
