Sesame-Ginger Stir-Fry with Seasonal Vegetables

Ingredients
- 2 tbsp vegetable oil
- 1 cup broccoli florets
- 1 cup, sliced carrots
- 1 cup snap peas
- 1/2 cup, sliced red bell pepper
- 3 tbsp soy sauce
- 2 tbsp rice vinegar
- 1 tbsp honey
- 1 tbsp, grated ginger
- 2 cloves, minced garlic
- 1/4 cup sesame seeds
- 2 cups cooked brown rice
Instructions
- Step 1: Heat 1 tbsp vegetable oil in a large skillet over medium-high heat. Add broccoli, carrots, and snap peas, then stir-fry for 5 minutes until crisp-tender.
- Step 2: Add red bell pepper and stir-fry for 2 more minutes.
- Step 3: In a small bowl, whisk soy sauce, rice vinegar, honey, grated ginger, and minced garlic. Pour over vegetables and stir to coat.
- Step 4: Cook for 2 minutes until sauce thickens and glazes vegetables.
- Step 5: Stir in sesame seeds and cook for 1 minute until toasted.
- Step 6: Serve over 2 cups cooked brown rice.
