Ingredients
- 1 lb Chicken breast, boneless skinless
- 1/2 cup Carrots, finely grated
- 1/2 cup Zucchini, finely grated
- 3 tbsp Soy sauce
- 2 tbsp Honey
- 1 tbsp Sesame oil
- 2 cloves Garlic, minced
- 1 tsp Cornstarch
- 2 tbsp Green onions, sliced
- 4 cups Cooked rice
Instructions
- Step 1: In a medium bowl, combine 1 lb boneless skinless chicken breast (cut into 1-inch cubes), 1/2 cup grated carrots, 1/2 cup grated zucchini, 2 cloves minced garlic, and 1 tsp minced ginger. Mix until evenly distributed.
- Step 2: In a small bowl, whisk together 3 tbsp soy sauce, 2 tbsp honey, 1 tbsp sesame oil, and 1 tsp cornstarch until smooth.
- Step 3: Heat 1 tbsp vegetable oil in a large skillet over medium-high heat. Add the chicken mixture and cook for 6-8 minutes, stirring occasionally, until chicken is no longer pink and vegetables are tender.
- Step 4: Pour the sauce mixture over the chicken and stir to coat. Cook for 2-3 minutes until sauce thickens and coats the chicken.
- Step 5: Garnish with 2 tbsp sliced green onions and serve over 4 cups cooked rice.
