Sesame-Glazed Tofu and Vegetable Stir-Fry

Ingredients
- 14 oz firm tofu
- 4 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp honey
- 1 tsp sesame oil
- 2 tbsp vegetable oil
- 3 cups (broccoli florets, bell peppers, carrots, sliced thinly) mixed vegetables
- 3 cloves, minced garlic
- 1 tbsp, minced fresh ginger
- 2 tbsp sesame seeds
- 1/4 cup water
- 2 tbsp cornstarch
Instructions
- Step 1: In a bowl, combine 2 tbsp soy sauce, 1 tbsp rice vinegar, 1 tbsp honey, and 1 tsp sesame oil. Add the 14 oz pressed and cubed tofu and toss to coat; let marinate for 10 minutes.
- Step 2: Heat 2 tbsp vegetable oil in a large skillet over medium-high heat until shimmering. Add 3 cups mixed vegetables and stir-fry for 3-4 minutes until crisp-tender. Add 3 cloves minced garlic and 1 tbsp minced fresh ginger, stir-frying for 1 minute until fragrant.
- Step 3: Remove tofu from marinade (reserving marinade) and add to skillet. Cook for 4-5 minutes, turning occasionally, until golden on all sides.
- Step 4: In a small bowl, whisk together 1/4 cup water, 2 tbsp cornstarch, and 2 tbsp soy sauce. Pour this mixture into the skillet and stir until sauce thickens and coats vegetables and tofu, about 2 minutes.
- Step 5: Sprinkle 2 tbsp sesame seeds over the top and serve immediately.
