- 8 oz cherry tomatoes
- 1 tsp fresh rosemary
- 1 tbsp avocado oil

Instructions
- Step 1: Preheat oven to 425°F (220°C). Pat 1 lb chicken thighs dry and season evenly with 1/2 tsp sea salt and 1/4 tsp black pepper.
- Step 2: Place 8 oz cherry tomatoes in a single layer on a parchment-lined baking sheet, then arrange chicken thighs skin-side up around them.
- Step 3: Drizzle with 1 tbsp avocado oil and sprinkle with 1 tsp fresh rosemary, tossing gently to coat.
