Sheet Pan Lemon-Garlic Salmon with Asparagus and Cherry Tomatoes

Ingredients
- 4 (6 oz each) Salmon fillets
- 12 oz, trimmed Asparagus
- 1 cup Cherry tomatoes
- 3 cloves, minced Garlic
- 1, zested and juiced Lemon
- 2 tbsp Olive oil
- 1/4 tsp Salt
- 1/8 tsp Black pepper
Instructions
- Step 1: Preheat oven to 425°F. Place salmon fillets skin-side down on a parchment-lined baking sheet. Season with 1/4 tsp salt and 1/8 tsp pepper, then top with 1/2 tsp lemon zest, 1 tbsp lemon juice, and 2 minced garlic cloves.
- Step 2: Arrange 12 oz asparagus and 1 cup cherry tomatoes around the salmon. Drizzle with 2 tbsp olive oil, sprinkle with remaining 1/2 tsp lemon zest and 1 minced garlic clove, and season with additional 1/8 tsp salt and 1/8 tsp pepper.
- Step 3: Roast for 15-18 minutes until salmon is opaque and flakes easily with a fork, and vegetables are tender with slight browning on edges.
